A Healthier Shrimp Fried Rice (Recipe)

The older I get and the more active my kids get I get more and more in tune with the fact that I NEED to eat healthier. It’s not only an option anymore, it’s something I need to do for my kids, for my family. Fried rice has always been something I’ve been fond of but let’s face it, it’s not the healthiest thing to eat…until now. This healthier version of Shrimp Fried Rice will have your mouth watering!

A Healthier Shrimp Fried Rice

Shrimp Fried Rice RecipeThe trick here to making it healthier is using cauliflower instead of rice! Making rice out of cauliflower seems quite scary, but it’s simple and turns out so delicious. I buy a large head of cauliflower, and once you’re done roasting it, it usually serves 2 hungry adults.

Ingredients

1 large cauliflower, cut into small pieces
1 clove garlic, finely minced
salt/pepper
3 Tbsp olive oil
 
1/2 cup peas, frozen is fine
1 large carrot, diced  – frozen is fine
10 large shrimp, cooked
1 scallion, sliced
 

Directions

Preheat oven to 350. 
 
Healthy Fried Rice
 
In a food processor, add the cauliflower and process until very fine and it resembles rice. You may need to do a little at a time. Pour all of the fine cauliflower rice on a large baking sheet and add the olive oil, season with a bit of salt and pepper. Toss gently with hands until it’s evenly coated. Spread the cauliflower on the baking sheet and allow to roast for 10 minutes.  Remove from oven and carefully give it a stir and spread it out again – you do this so it doesn’t burn on one side. 
 
Shrimp Fried Rice
 
Roast for another 10 minutes and repeat the same process. You will do this about 3 times, or until the cauliflower rice has turned into a nice golden brown and it is dry. 
 
If your carrots are raw, cook in some water until they are tender. Also, if you have raw shrimp, cook it in some olive oil and garlic – this takes 5 minutes.  
 
Add the peas, carrots and the scallions to the cauliflower and toss gently. Put it in a bowl and add the shrimp. Check for salt. 
 
You can add soy sauce and 2 scrambled eggs, if you prefer. 
 
Healthy Shrimp Fried Rice
Looks amazing, doesn’t it!? It tastes ever better than it looks! You could even swap out the shrimp for some chicken if you don’t love seafood.
