Twist it Up! A New Way to Serve and Enjoy Green Bean Casserole #ThisIsMyTwist

Creating a new twist on one of my favorite dishes, green bean casserole, was really fun for me. So fun, in fact, that I couldn’t stop there. As I was deciding what ingredients to add to my twisted green bean casserole I got another idea…an entirely new way to serve it! Twice baked green bean casserole potatoes will soon be a family favorite!

Ingredients for Twice Baked Green Bean Casserole PotatoesIn addition to your twisted green bean casserole, you’ll need the following ingredients:

6 large potatoes
Olive Oil
Salt and Pepper
Shredded Cheddar Cheese
French’s® Crispy Fried Onions

Preheat oven to 350°. Prick potatoes all over with a fork and rub with oil; season generously with salt and pepper.

Baked PotatoesPlace potatoes directly on an oven rack and roast until very soft when squeezed and skin is crisp, 60–75 minutes. Remove potatoes from oven and set aside to cool.

Twice baked potatoesOnce the potatoes cool, slice potatoes in half lengthwise and scoop out the middle of the potatoes with a spoon and add to a large mixing bowl. Be sure to leave about 1/4 of an inch of potato attached to the skin. You want it to resemble a boat. Once the middle of all potatoes are in the bowl, mash the potatoes as best you can with a masher, some chunks are fine.

Mix in your twisted green bean casserole (leaving out the cheese and French’s® Crispy Fried Onions that are on top) until you have a good consistency: not too thick, not too thin. Fill your potato “boats” with the mixture.

Twice Baked Green Bean PotatoesOnce all potatoes are filled and topped, it’s time to put them in the oven again! Grease a baking pan and arrange potato halves. Set the oven to broil (low) and place the pan of potatoes as close to broiler as possible. Broil for 5-10 minutes (watch carefully as to not burn them) just until cheese is well melted.

Green Bean Casserole Baked Potatoes #ThisIsMyTwistAs I mentioned before, my mom, sisters and I always get together and bake the night before a holiday. This year the night before we’ll make my twisted green bean casserole and bake the potatoes, fill and top them. We’ll only have to bake them the second time the day of our holiday get-together, saving time and serving awesomeness!
