We have one week left until school starts here. My husband is back at work this week so it’s back to busy schedules. I’m already feeling it two days into the routine we are accustomed to 9 months out of the year. I’m so tired and the thought of going home after work and cooking is too much some days. We NEED quick and easy dinner ideas to get through not only the adjustment period of back to school but also on busy nights that can be packed full of school or sports events. I really do not like grabbing something quick at a fast food restaurant when we are limited on time but I do love grabbing something quick and easy from our local Walmart. Five Easy Meals with Rotisserie Chicken

I’m all about quick and easy meals. As a mama who has four children and works outside of the home in addition to blogging and all of the home things that need my attention, fast is necessary most nights. The effortless meals at Walmart allow me to provide healthy and fresh options for dinner during our crazy busy evenings while at the same time still enjoying a positive mealtime experience together. If you were to ask my husband he would tell you I could live off of chicken and chicken alone. I LOVE it. I don’t really need beef in my life and I don’t eat seafood/fish so I’m good with chicken which means I’ve become a near expert at creating numerous recipes with chicken as the main ingredient! Rotisserie chickens are so good in taste and convenience. I can quickly pick one (or two) up at my local Walmart and use it for so many different things. 

Effortless meals at Walmart The signs at Walmart about their effortless meals makes it so easy to find an easy solution for dinner when you don’t have much time to put in a lot of effort! Walmart has a few effortless meal solutions including the Marketside rotisserie chicken and the Marketside pizza. Here are more details about them since we love the convenience:

  • Marketside Rotisserie Chicken Meal: Rotisserie Chicken (29 oz.), 2 lb. Side (Potato Salad, Macaroni Salad, or Cole Slaw), and 2 Liter Coca-Cola product.
  • Marketside Pizza Meals: 16″ pepperoni pizza or 16″ five cheese pizza and 2 Liter Coca-Cola product.
    • In some Walmarts, you may find “Hot & Fresh” Marketside pizzas for purchase – brilliant idea, right!?

Since I have become a pro at making various things with rotisserie chicken I wanted to share some with you. I’ve narrowed my list of favorites down to five!

Effortless Meals at Walmart #effortlessmeals1. Rotisserie Chicken Meal

The first, and obvious, meal with rotisserie chicken is just that – a rotisserie chicken dinner. We love grabbing the chicken, a 2 pound side (our favorite is cole slaw) and a 2 liter of Coca-Cola for a quick dinner. We also grab some rolls and a veggie, such as green beans, and we’ve got an entire effortless meal!

2. Chicken Quesadillas

Another meal the kids love are chicken quesadillas! We use tortilla shells, halve them and toss in some rotisserie chicken, peppers (onions and mushrooms for hubby and I since the kids don’t like them), and cheese. They are incredibly easy and delicious!

My family loves tacos and using rotisserie chicken to make them is a huge hit! We simply pick up some small soft taco shells, a head of lettuce, cheese and salsa and toss them together in a matter of minutes! You can also add any other typical taco toppings (tomatoes, black olives, onions, etc) but I try to keep it as simple as possible because the more toppings, the more prep work and I don’t always have time for a lot of prep work.

4. Chicken Pasta Salad

We simply cook some Angel Hair Pasta or Spaghetti noodles and add in rotisserie chicken, red and yellow peppers, halved cherry tomatoes and some Italian dressing. This is also great cold and can be made with left over chicken from meal #1 for easy lunch the next day! It’s quick, easy and it has protein and veggies in it, unlike many things you might get at a fast food restaurant!

5. BBQ Chicken Pizza

Our last (and by no means least) favorite meal with rotisserie chicken is BBQ Chicken Pizza. This is actually one of my favorite meals with rotisserie chicken! It’s, in a way, fun to make! I use the premade pizza crust from the grocery store along with the rotisserie chicken to make it a very quick and easy dinner!

The pizza literally takes me 10 minutes to put together so this is definitely a meal that can be had in less than 30 minutes! Another effortless meal made possible with rotisserie chicken from Walmart!

BBQ Chicken Pizza

Delicious, quick and easy BBQ Chicken Pizza using rotisserie chicken!

  1. Premade Pizza Crust
  2. 1/2 Cup BBQ Sauce (brand of your choice)
  3. 1 1/2 Cups Rotisserie Chicken
  4. 2 Cups Shredded Cheddar or Colby Jack Cheese
  5. 1/8 Cup Bacon Bits
  6. Chopped Cilantro
  7. 1 Small Red Onion, chopped (optional)
  8. 1/8 Cup Pineapple Tidbits (optional)
  1. Spray pizza pan and unroll pizza dough onto pan.
  2. Spread the BBQ sauce evenly (may add more or less depending on how much sauce you like). Leave 1/2 inch around all sides of the pizza for the crust.
  3. Spread rotisserie chicken, bacon bits and onion over the sauce.
  4. Cover the pizza with shredded cheese.
  5. Top with Pineapple Tidbits and Cilantro.
  6. Bake according to the pizza crust directions (typically 425 degrees for approximately 8-10 min).
