Time is always something I wish I had more of. It seems there is never enough time to get done what I need to. As a mama of four with a full time (outside of the home) job my days fill up fast! We always need quick and easy dinner ideas, and recently we decided to throw a graduation open house for our son who will be starting college this fall. Apparently having a party later in the summer is the thing to do these days according to our teen and his friends. Our family is in Ohio so we decided to travel there and throw the party so I knew I would need some quick recipes to get the food done on our limited time there! I knew I would need something prepared with some ready to go proteins from the store to save time!
Since my son loves pasta I decided to throw together a pasta dish with some ready to go proteins I picked up at Kroger! Hormel has recently come out with Everyday Scratch, meats that are cooked and ready to add to your dishes! Chicken Tortellini Alfredo with Red Peppers and Spinach was the main course on the menu! I couldn’t wait…just thinking about the taste made my mouth water! 😉
Here is the list of ingredients for the Chicken Tortellini Alfredo with Red Peppers and Spinach:
- 1 package of ready to go proteins like the Everyday Scratch Flame Seared Chicken from Hormel (you could also use their Rotisserie Chicken)
- 1 jar Alfredo Sauce
- 1 package of Cheese Tortellini
- 1 Red Bell Pepper
- Spinach (I used two handfuls, you can add as much or as little as you wish)
- 1/2 tsp Oregano
- 1/2 tsp Onion Powder
- 1 tbsp minced garlic
- 1/4 cup Parmesan cheese
Once we got into Ohio we stopped at Kroger before heading to my mom’s house to get the food preparation started. I went to the prepared sides & entrees section to find the ready to go proteins I would need for my menu items.
I took it out of the package, separated some of the pieces for smaller pieces and added some chopped red peppers and 1 tbsp of minced garlic to the pan. I cooked this for about 10 minutes just to warm it and saute the peppers.
Also, at that time in another pan I browned the tortellini with some spinach added. I added the onion powder and oregano after I was happy with how browned it was. I then added a jar of Alfredo sauce.
The flame seared chicken was among a few choices we had in terms of ready to go proteins that are #NewFromHormel and I was so glad I chose it! Look at how amazing it looked as I was adding it into the tortellini and Alfredo sauce. After removing it from the pan I topped it with Parmesan cheese for a delicious finish!
The Chicken Tortellini Alfredo with Red Peppers and Spinach was a hit! It was quick and easy for me to prepare with limited time and everyone enjoyed it! With limited time in my regular evenings at home I will definitely be preparing this again! It was done in about 30 minutes, leaving plenty of family time in our evenings!
Finding foods that our little ones love can be difficult so I was thrilled they liked this, too! That’s one more meal I can cook that everyone will like and I won’t have to cook something separate for the kids! 😉
Knowing there would be teen boys there, I also picked up the new Hormel Sandwich Meat in the Buffalo Chicken flavor for some quick burritos to have on hand. These were a big hit and so convenient! I simply made some rice, mixed in black beans, cheese and the Hormell Buffalo Chicken and wrapped in a tortilla shell!
