Menu Challenge Monday – January 27, 2014

It was a long week…busy and full of preparing for baby! BUT, the menu plan was constantly on my mind….see how I did below…

Monday: Pork Roast with Veggies and Fried Potatoes  – This happened!!!  SUCCESS

Tuesday: Left over Roast, Mac N Cheese and Corn – This happened!!! SUCCESS

Wednesday: Frozen Pizza with left over Mac N Cheese – This happened!!! SUCCESS

Thursday: Sesame Chicken and Rice – This happened and was delicious! Recipe coming soon! SUCCESS 

Friday: Taco Stuffed Shells (going to try and prepare these Thursday when I am off of work and just cook Friday night!) THIS HAPPENED! SUCCESS!!

Saturday: Potato Cheddar Soup — We ended up having left over taco stuffed shells! AT HOME!! SUCCESS!!

Sunday: Chicken and Bacon Lasagna Roll Ups – this did not happen….made potato cheddar soup and bacon, cheese and tomato sandwiches instead! SUCCESS!!!

FINALLY….a week full of success!!!!  I did it! I cooked/ate at home EVERY NIGHT!!!! WOOHOOO!!!!!! It felt good to use things from the fridge, use ALL of things, use the rest of things….and not waste!

Here’s the plan for this week! Let’s see if I can do it again…it’ll be hard this week though because my work schedule changes in case I go into labor so I actually have to work later than normal and that means less time to cook in the evening. Here goes:

Monday: Frozen Pizza and Mac N Cheese (yes, this is my go to meal when I have little time and don’t want to eat out! I didn’t prep anything and I know I’ll get home too late to cook)

Tuesday: Chicken and Bacon Lasagna Roll Ups (hoping to make extra and freeze for when baby arrives)

Wednesday: Breakfast for Dinner!

Thursday: BBQ Bacon Cheddar Chicken, Fried Potatoes and Corn 

Friday: Sloppy Joy w/Cole Slaw

Saturday: Eat Out – we are going to a Mom 2 Mom sale early in the day and I am sure I will be exhausted.

Sunday: Chicken Chalupas 

I know it’s going to be a challenging weeks…wish me luck! I am hoping I made it simple enough to really stick to it! This weekend I really need to cook/freeze meals to be ready for more later nights at work next week. Ugh. 🙁 PLUS…I’ll be 38 weeks pregnant so you never know when baby will show up!

  1. When meal planning, do you do you grocery shopping shop weekly? Also, do you do any preparations for your meals ahead of time?

    I would definitely love to know your recipe for sesame chicken and rice when you add it to the web site.

    • I TRY to shop twice a month, every other week. I typically do end up going on the off week though for a few things even if it’s just fresh veggies. I also intend to do prep on Sunday of some meals and freeze them but lately I’ve not been successful! 🙁 Thanks so much for stopping by! 🙂
