Menu Challenge Monday – January 13, 2014

Well, I was determined to get back into the planning. Let’s see how I did….

Monday: Hamburger, Corn & Noodle Casserole – this happened but it turned out gross. We ate other stuff at home instead.

Tuesday: Chili (this happened)

Wednesday: Left overs (this did not happen. We are out.) 

Thursday: Sesame Chicken with Broccoli and Rice (this did not happen. We ate out.)

Friday: Broccoli and Cheddar Soup with Bacon, Tomato and Spinach Sandwiches (This did not happen but instead I made Sesame Chicken with Broccoli and Rice…and burned it when I stepped away to help the kids with something. We had to eat out.)

Saturday: BBQ Bacon Cheddar Wrapped Chicken, Mac N Cheese and Corn (this did not happen. We ate out. Yes, at this point I’m hanging my head in shame.)

Sunday: Taco Stuffed Shells (this did not happen but instead I made Broccoli and Cheddar Soup with Bacon, Tomato and Spinach Sandwiches! Yum!)

Menu Challenge ButtonHere’s the plan for this week! I’m going to try and do better!! Here goes:

Monday: Left overs from Sunday – Taco Stuffed Shells (this was planned but I can tell you it didn’t happen. I am fighting a cold and because he knew I am not feeling well hubby offered to pick up dinner so I didn’t have to do any work.)

Tuesday: Lasagna Roll Ups

Wednesday: Frozen Pizza

Thursday: Pork Sirloin Roast with Veggies

Friday: Left Overs

Saturday: Eat Out

Sunday: Chicken Burritos

How are you doing on your menu planning? Better than I did in the past week? 😉 I hope so!

    • I have a lot of rough ones Emily!! LOL I do love our crock pot but then comes the problem of trying to get the food prepared the night before so I can start it before I leave for work! LOL Always something! haha! I’m looking for some great budget friendly meals over the next few weeks…any ideas for me? 🙂 Thanks for stopping by!

    Have you thought about using a crockpot! They’re a real meal saver! I do things like lasagna and enchiladas. Soups are great in them! Using a crockpot frees up a lot of time in the afternoon. Good luck!

    • Hi Darlene! I love crockpot cooking and need to do more of it! I work during the day so it’s tough for me to find the time to even prep that. 🙁 I would love to try lasagna or enchiladas in the crockpot…never done something like that! I’ve tried soups more recently and LOVE it! 🙂 Thanks for stopping by!

    • I do have a crockpot believe it or not! lol I then struggle to actually get the meal prepped and started before I go to work early in the morning! haha! I need to work on time management too apparently….or just having energy. haha! 🙂 Thanks for stopping by!
