Menu Challenge Monday – December 2

I think I did much better this past week in terms of not eating out as much. I’m also super excited about the meal planning this week because there isn’t much of it with the holiday! That means less thinking, planning, shopping and cooking! I get a legitimate lazy week! haha!

Last week…

Monday: Crock Pot Roast – This happened! :) #Success

Tuesday: Leftover Crock Pot Roast – This happened! :) #Success 

Wednesday: Slow Cooker Chicken Teriyaki - This did not happen. We were busy getting ready for the holiday and ended up eating out. #Fail

Thursday: THANKSGIVING DAY!!!! Eat with family, no cooking for me! ;) Happy Thanksgiving to you all!! YAY! This happened! #Success

Friday: Eat out day – traditionally we eat out at my favorite Chinese restaurant the day after Thanksgiving! I’m excited! This did not happen this year. :(  As sad as I was, I just wasn’t feeling well enough to go out after driving three hours to get to my mom’s house. We ordered pizza from a favorite place back home.

Saturday: Another family Thanksgiving!! WooHoo!!! This happened and it was delicious! #Success ;)

Sunday: Left Overs – Well, not really. We had frozen pizza….still at home, but we just couldn’t do left overs. haha!
So….seems like we really only had one fail this week. I count my fails when we eat out instead of in. ;) I’m glad it was an easy menu week, but this week I’m going to be challenged.

This week is going to be the craziest week in probably 10 years at work. Well, it’s expected to be anyway so I know I will be mentally drained by the time I get home each night. Of course for some reason all of the meals I’ve planned won’t really allow for leftovers/less cooking this week so that, along with how I’ve been feeling, will make this menu a challenge to stick to. Here’s the plan for this week:

Monday: Kielbasa, Mashed Potatoes and Sauerkraut (easy after an exhausting day!)

Tuesday: Eat out…Yes, I am planning an eat out day early in the week. I’ll try to change this, but Tuesdays are rough for me.

left overs (Sat) or eat out
beef stew (Sunday)

Wednesday: Mac n Cheese, Green Beans, Chicken Salad Sandwiches

Thursday: Hamburger, Corn & Noodle Casserole

Friday: Slow Cooker Chicken Teriyaki

Saturday: Eat Out

Sunday: Beef Stew

Hoping I’ll have the energy to do this. I know it’s going to be a rough week that I am dreading at work…that’s why I PLANNED two eat out days this week and tried to do easy meals for the rest of the nights.

  1. We always plan our meals but rarely stick with the plan. Sometimes a meal will last longer than expected and then everything gets messed up if the next meal is too involved for the time that we have. It can get a little frustrating. But at least we try, right?

    I did chicken thighs teriyaki style before but I didn’t use the slow cooker. Putting raw chicken in a slow cooker makes me nervous.

  3. Planning out meals probably works very well for families. Being on my own, I can improvise.
