A Healthier Version of Loaded Cheesy Potato Casserole for the Holidays

It’s time for the holiday cooking to begin! I love this time of year: the family, the food, the meaning, and yes…the cooking! We have a ton of recipes in our family that come out around the holidays and Stonyfield recently challenged us YoGetters to create a healthier version of a holiday recipe! How fun is that!? Loaded cheesy potatoes is one thing my mom always makes the weekend of Thanksgiving, if not on Thanksgiving day. It’s one of our favorites so I decided to make it a bit healthier for this year’s Thanksgiving! After all, I am in my last trimester and I don’t want to put on a lot of unwanted extra pounds over the holiday season!

One way to give a dish a healthy boost is by replacing a less nutritious ingredient with a similar, more nutritious one. Stonyfield Yogurt is a great substitution — it’s packed with nutrients like live & active cultures, protein, calcium, vitamins D, B2 and B12, potassium and magnesium. With its smooth texture and mild flavor, yogurt can easily be used in several types of recipes. Stonyfield offers plain organic yogurt in three fat levels (whole milk, lowfat and nonfat), as well as in a Greek option (even more protein).

Healthier Loaded Cheesy Potato Casserole

We substituted Stonyfield Greek 0% Fat Plain yogurt for the sour cream that we would normally put in this recipe. It was a simple substitution and helped to make our recipe more healthy and it had less calories! Every calorie counts over the holiday season when we all eat way too much anyway, right? 😉

Loaded Potato Casserole Ingredients
Here’s what you’ll need to make this recipe:

1 – 12 oz container of Organic Cream of Chicken Soup
1 – 5.3 oz container of Stonyfield Greek 0% Fat Plain Yogurt
1/3 Cup Bacon Bits
1/3 Cup Organic Green Onion, sliced
6-8 oz. Organic Shredded Cheddar or Mexican Blend Cheese
1 – 16 oz bag of shredded hashbrowns
Paprika to garnish

Steps to Preparing Loaded Cheesy Potato Casserole

  1. In a bowl, mix together the Cream of Chicken Soup and the Stonyfield Greek Yogurt until smooth.
  2. Add 6 oz. of shredded cheese to mixture and stir well.
  3. Add in Bacon Bits and Green Onion, stir well.
  4. Add in hashbrowns and stir well.
  5. Spoon mixture into a glass baking dish.
  6. Top with the other 2 ounces of shredded cheese (and any other left overs you have of the bacon bits and/or green onions).
  7. Sprinkle with Paprika.

Once you have your casserole assembled cover and bake for 25 minutes at 350 degrees. Remove cover and bake an additional 5 minutes or until top cheese is fully melted.

Let your casserole cool, cut into slices and serve!

It turned out great!  Even hubby loved it and was surprised at just how delicious this casserole was with the healthy substitution! (Of course, I didn’t tell him until after he ate it! haha!!)
