Menu Challenge Monday – September 30

This is proving to be more of a challenge each week. I absolutely love eating out and that is my downfall…especially when I am so tired with this pregnancy and sometimes may have the energy to cook, but not to clean up. When I think of the time and the energy involved in doing both I am discouraged. I intend to cook as much as possible for my family but some days that just doesn’t happen.

Last week: It didn’t turn out as planned. Here’s what was planned and what happened:

Monday: Chicken and Stuffing Casserole – This happened…started out good! 🙂

Tuesday: Chicken and Stuffing Casserole (left overs) – This wasn’t as good as I hoped and I DID NOT want left overs so I cooked cheese ravioli with alfredo sauce and broccoli instead. Still a meal at home so I am counting it as a success!

Wednesday: Lasagna with Zucchini – This happened.

Thursday: left over Lasagna from Wednesday night – This happened. 🙂

Friday: Kielbasa, Sauerkraut and Mashed Potatoes – we ate out. #Fail

Saturday: This will be our eat out day. – This happened.

Sunday: Grilled Cheese and Tomato Soup – #Fail…in my defense, I ended up working Sunday and by the time I got off it was too late to really cook anything. 🙁

Here’s the plan:

Monday: Crock Pot Korean BBQ Short Ribs with Broccoli and Rice

Tuesday: Left Overs from Monday (hoping there is enough!!)

Wednesday: Kielbasa, sauerkraut and mashed potatoes (didn’t have this last week as planned so trying again!)

Thursday: Stuffed Chicken with Mashed Potatoes and Cheese Grilled Zuccini

Friday: Cheddar Potato Soup and Chicken Salad Sandwiches

Saturday: Left Overs from Friday

Sunday: Scalloped Potatoes and Ham in the Crock Pot with a side of Corn

I’m trying a few new recipes this week and praying they turn our good!! Hoping to share some of them on the blog, too!

  1. Great menu choices. Gives me some ideas (cheddar potato soup..mmm). I need to be better at planning out meals. I have the same problem–too tired/lazy (I’m preggo too!) and love to eat out too much!

    • It’s so hard, isn’t it!? Being pregnant alone should allow us the luxury of a chef!! haha! The soup is fantastic! I use the recipe from Mom Spotted (it’s also on my Pinterest board of recipes I want to try)….it was super yummy! I highly recommend it! Best of luck with your pregnancy! 🙂
