Yes, it’s always a challenge for me. I intend to cook as much as possible for my family but there are always things that get in the way: lately I’ve been too tired, not feeling well or my work schedule has interfered. I really do so much better at sticking to my goal of cooking when I have meals planned out. SO…I have brought back my Menu Challenge Monday feature and I’ll be working super hard to stick with it!
Last week: It didn’t turn out as planned. Here’s what was planned and what happened:
Monday: Chili (leftover from yesterday) – This happened.
Tuesday: Crockpot Beef and Noodles with a side of corn. – This happened, too!
Wednesday: left overs from Tuesday (Wed is my late night at work so I planned a meal Tuesday that would have enough for two days…I may be doing this often but at least it’s two meals AT HOME!! ) - this did not happen. We did not have enough for left overs. I had one serving left over that I ate for lunch Wednesday. Bad planning on my part had us eating out this night.
Thursday: Taco Casserole – This didn’t happen because of an incident I had early in the week (read about that in my pregnancy journal later today!) that had me scared to eat anything that might affect acid reflux. Instead, I made the chicken salad sandwiches with man n cheese earlier than planned.
Friday: Left overs again…Taco Casserole - We did have chicken salad sandwiches as left overs, not taco casserole.
Saturday: Chicken salad on wheat toast with a side of mac n cheese and fruit. We ate out this day, too. TERRIBLE WEEK.
Sunday: Chicken and Stuffing Casserole with a side of broccoli. – We took the kids to see The Wiggles and ate out afterwards. When making this menu plan I forgot that we wouldn’t be home this day. #Fail
I shop for groceries two weeks at a time so I am feeling pretty confident that I have everything to make this menu stick since I shopped last week! I am hoping I can eat the lasagna without any bad side effects. Let’s hope I can do better this week!
Here’s the plan:
Monday: Chicken and Stuffing Casserole
Tuesday: Chicken and Stuffing Casserole (left overs)
Wednesday: Lasagna with Zucchini
Thursday: left over Lasagna from Wednesday night
Friday: Kielbasa, Sauerkraut and Mashed Potatoes
Saturday: This will be our eat out day.
Sunday: Grilled Cheese and Tomato Soup
