Yes, it’s always a challenge for me. I intend to cook as much as possible for my family but there are always things that get in the way: lately I’ve been too tired, not feeling well or my work schedule has interfered. I really do so much better at sticking to my goal of cooking when I have meals planned out. SO…I am going to bring back my Menu Challenge Monday feature and TRY really hard to stick with it!
Here’s the plan:
Monday: Chili (leftover from yesterday)
Tuesday: Crockpot Beef and Noodles with a side of corn.
Wednesday: left overs from Tuesday (Wed is my late night at work so I planned a meal Tuesday that would have enough for two days…I may be doing this often but at least it’s two meals AT HOME!! )
Thursday: Taco Casserole
Friday: Left overs again…Taco Casserole
Saturday: Chicken salad on wheat toast with a side of mac n cheese and fruit.
Sunday: Chicken and Stuffing Casserole with a side of broccoli.
