Every Thursday two of my blogging friends, Trista from Andersons Angels and Stacie from Staying Me host a Crockpot Thursday feature. I have been enjoying cooking more lately and I’ve been participating in this occasionally Last week I made something new in the crockpot…chicken and noodles!
I started out trying to make something else, believe it or not! LOL It didn’t turn into the recipe I found on Pinterest, but it turned into chicken and noodles and I love that meal so I was happy! The crockpot ranch chicken I was trying to make, I didn’t see an amount of water on the recipe so I assumed I needed to cover the chicken in the crockpot and ended up adding too much water! haha! oops!
Here’s how I made it though:
I put the boneless, skinless chicken breasts into the crock pot and covered them with a packet of ranch dressing mix. It’s the packet, not ranch dressing already made, so just the powder. I then covered it in water and let it cook for five hours. When I took the chicken out it was incredibly soft and so easy to shred.
I shredded the chicken in a bowl with just a pronged spatula. In a separate bowl, I combined an 8 oz softened cream cheese package with a container of cream of chicken soup. Once stirred well, I combined all in the crockpot, added carrots and let it cook for 2 hours longer.
It turned out kinda runny, but it was delicious and all I had to do was cook some egg noodles to put underneath it and there you have it…chicken and noodles! I also want to try this over mashed potatoes with biscuits! YUM!
I had left overs from the crockpot that I froze and I bought some gnocchi at the grocery store so I am going to make chicken and gnocchi soup this weekend! Sounds delicious…hope it is!
