Cooking is something I really enjoy and lately, I’ve come to enjoy blogging about it! This week I’m linking up with some blogging friends for Crock Pot Thursday! Each week, Trista from Anderson’s Angels and Stacey from Staying Me share crock pot recipes. I made a roast in the crock pot over the weekend and it was YUM-O!! Ingredients Needed:
Roast
Carrots
Onions (we use red onion)
Onion Soup Mix
Water
Optional – you can also add mushrooms and potatoes
I actually bought a four pound roast and since it’s just my our little family I had them cut it in half for two meals. The roast in the crock pot photos below is about two pounds. Once I put the roast in the crock pot, I cover it in with a package of onion soup mix. I then fill the crock pot with water until it just covers the roast.
I cooked this on low heat for about seven hours. I then added in some carrots and onions (we also add mushrooms and potatoes sometimes) and cooked for another forty-five minutes. Easy peasy!
I didn’t eat any of the onions on my plate and I forgot to get a picture of my husband’s plate. I also made homemade mashed potatoes and green bean casserole! Yum! On days that I work outside of the home crock pot recipes are a life saver! It’s a quick and easy dinner but still homemade, hearty and delicious!

For some reason I’m intimidated by cooking roast, but this recipe looks really easy. Love the idea of adding mushrooms and potatoes…. I try to add as many veggies as I can get away with to every meal so my toddler gets used to them.

I am going to love crockpot Thursdays . I like cooking and baking, but some days you just want something easy and this recipes is great cause I do the same thing with my roasts. I will be sure to tune in next week for anther recipe. Thanks
Hi April!! This looked delicious! Wish I could have came up for dinner this night! Something that I do when I make a roast is actually cook the whole 4 lb. roast all the way, take half out, shred it, add bbq sauce, and then I have dinner started for the next night. The only catch is to make sure you take the 1/2 out before you add the veggies or just cook it separately.
Something I forget to do often! I hate picking out the veggies/potaotes when I do that!
OHHH!! I’ve never tried the shredded BBQ thing! That sounds yum!! I need a “how-to” on that!!
