I love to cook believe it or not. I really enjoy it, but I’m not so great at it! Another confession? I am addicted to Bob Evans. I know, I know – it’s not good for me! It’s a weakness I have though. They have this entree there called “Open Face Roast Beef” and it’s delicious! So…my mind went “a wonderin’” and I wanted to try something similar and decided it would be “Open Face Beef Stew”! Ok, so it’s not technically a stew, but it’s similar!
I started off by putting some cubed beef stew pieces in the baking dish topped with onion soup mix. I added water (until the meat was just covered) and cooked for about 2 hours.
While it was cooking I cut up some carrots, onions and mushrooms and added after about two hours. My husband and I prefer the veggies to not be overcooked/soggy so we add them towards the end of the cooking time.
After adding the veggies I made some homemade mashed potatoes to go with it. I cheated and opened a jar of gravy and heated that.
The total cook time for the “beef stew” was about 2 hours 45 minutes. I toasted some Texas sized bread and added the meat and gravy on top and added my sides of mashed potatoes and gravy and veggies. YUM-O!
