You read that correctly…it’s a super-challenging menu week. Last week I did pretty good at following my plan. This week, not only am I sick, but we are also just back from a vacation weekend. It’s Monday and I’ve no clue what’s for dinner tonight, let alone the rest of the week. So, I’m gonna come up with plans are I write this. LOL
Ok, first, let’s see how I did last week. These were the plans:
Monday – left over Garlic Parmesan Chicken SUCCESS!
Tuesday – Chicken Pot Pie (I already made this and put it in the freezer to this is a sure bet!) SUCCESS
Wednesday - left over Chicken Pot Pie (we always have enough for two days) SUCCESS
Thursday - General Tso’s Chicken and Rice with Egg Rolls (cooked at home – not take out!) #FAIL We were so busy getting ready to go out of town that I totally didn’t cook. We ate out.
Friday, Saturday and Sunday we have to eat out because of some things going on.
This happened, for sure. We ate our all three nights because we were on a mini vacation.
I’ll write all about it soon!
I may try to cook Sunday, but I am not sure I will have the time. Didn’t happen…I got sick on vacay and did not feel like doing anything but going to bed when we got home. LOL
Let’s see for this week….
Monday – I am gonna say we are eating out because I am sick and miserable. I am not cooking.
Tuesday - Chicken Alfredo with broccoli and mushrooms. Yum!
Wednesday – left overs
Thursday - Chili -hubby’s specialty! I love it when he cooks chili!
Friday – left overs
Saturday – frozen Chinese food, maybe?
Sunday – Spaghetti
Wow, other than tonight, that’s a whole week of eating in! I am excited to see if I can do this!
