Menu Challenge Monday – Week 8

Wow, it’s Monday already? 🙂 I am kinda excited to plan out the food for the week! I am really getting into this habit, and it’s a good one! 😉

Results from last week: 

Monday: Sirloin Roast with Mashed Potatoes and Corn – SUCCESS and it was GOOD!!

Tuesday: Left Overs! Yum! – SUCCESS

Wednesday: Kielbasa with Mashed Potatoes and Sauerkraut – SUCCESS

Thursday: Possibly left overs from Wed…if not Lasagna – SUCCESS w/left overs…kinda. I had to go out of town for a funeral so I ended up eating take out Chinese with family, however, my husband stayed at home and had left overs from Wednesday! 🙂

Friday: Meatloaf with Baked Redskin Potatoes and Peppers #FAIL – I had to take a training class for work Friday evening and because my day time was spent driving back home I didn’t get to cook. Hubby bought a pizza when I was working and I ate some of that when I got home. 

Saturday: Left Overs – #FAIL – no leftovers as planned, but we at sandwiches at home. Hubby ate cereal…he loves cereal! 🙂

Sunday: Frozen Pizza (are you seeing a trend Sunday evenings? lol) SUCCESS!

Well, when I got word of the funeral early in the week I wasn’t to confident about eating IN all week. I have to say that even though I didn’t stick to the plan I am rather proud of how we did last week considering the circumstances! 🙂

Here are the plans for this week:

Monday – Meatloaf (since I already made it and froze it last week but didn’t use it), mashed potatoes and corn

Tuesday – Meatloaf sandwiches and Loaded Baked Potato Soup

Wednesday – Lasagna (since we didn’t have it last week) with a side of broccoli

Thursday – left overs

Friday – General’s Chicken and rice (cooked at home)

Saturday – Taco Salad

Sunday – Leftovers

Yes, I sure try to keep it simple if you couldn’t tell. 🙂 Someone mentioned that we have a lot of the same stuff…I am sure guilty of that! LOL I am not gifted with a wide knowledge of cooking unfortunately so I don’t know how to cook many things. Maybe I just don’t know what I can cook that’s quick and easy so I stick to the simple stuff? Sometimes though I also carry over meals to the next week that were planned but we ended up not having. I do this because I’ve already bought the ingredients. I would love to hear your ideas though!! I love cooking but I need quick and easy stuff because of my lack of time when I get home from work. So give me some ideas, please! 🙂
