I’ve been thinking lately about how much we’ve been eating out since baby Addy was born. I feel like I have no time to cook so why even make the attempt? Well, there are many reasons I need to meet this challenge so to remain accountable, I’ve created a new weekly topic here at Mama on a Green Mission: Menu Challenging Monday. It is indeed a huge challenge for me, but each week I’ll be posting our menu for the week! That’s right, I am going to make sure we have a home cooked meal each night, no matter how simple it is, it will be at home! So, here’s what I have planned for this week.
Monday ~ Crock Pot Roast with Potatoes, Carrots and Onions
Tuesday ~ Pulled BBQ Chicken Sandwiches with Macaroni and Cheese and Corn
Wednesday ~ Chicken Pot Pie
Thursday ~ Taco Salad (one of hubby’s favorites)
Friday ~ Crispy Garlic Parmesan Chicken (stay tuned for this recipe in an upcoming post)
Saturday ~ Dinner Out with the family!
Sunday ~ Creamy Lemon Chicken
There it is! I know hubby won’t be overly pleased with all of the chicken meals, but he’ll sure be happy to eat at home!

IT is so hard to come up with meals to feed your family each day. Then half the time I forget to take something out of the freezer and then I have no thawed meat to cook so we end up eating out or making pasta… I need to be so much better at this. I should try a weekly menu. That would for sure help greatly. I used to do it but stopped a long time ago.
